With a longtime affection for the community and surrounding valley, Eddie Sandoval moved to Buena Vista from Eagle County in the winter of 2008. Prior to opening The Asian Palate in 2008 at The Evergreen Cafe on Highway 24, Eddie started conversations with many locals who coincidentally said they would like to see a sushi restaurant open here.

Having just recently trained as a sushi chef, and the newfound love for that element of Japanese cuisine, it seemed obvious to offer sushi. But locals also expressed an interest in Thai cuisine, so he began working on dishes from various Southeast Asian countries.

Over five months in 2007-2008, Eddie traveled extensively throughout Asia, visiting and experiencing the food and cultures of Nepal, Thailand, Laos, Cambodia and the Philippines. A first-generation American descended from Filipino roots, he especially focused on the comfort foods that you might find on family dinner tables in these countries.  In 2012, he made another visit, spending about a month in Vietnam, Cambodia, and Laos.

The menu is inspired by these travels, his own family history, and in many ways, the experience and heritage of co-worker and Chef Agnes Heller, who is from Malaysia. Before moving to the current location at 328 E. Main St., Eddie accepted an offer from longtime BV local and Evergreen owner Barb Zucker to first open The Asian Palate at night when her café is closed. It was a good opportunity to test the waters and get a sense of how the community would embrace his ideas.  In March 2009, Eddie found the building on East Main and launched into an extensive remodel.

Cooking professionally since 1998, Eddie’s experience before opening the Palate included Mediterranean cuisines focused on French, Spanish and Italian techniques. He worked under James Beard award-winning Chef Jody Adams at Rialto in Cambridge’s Harvard Square, one of Boston’s top restaurants. At Sato in Edwards, Colo., he trained under many talented sushi chefs. Eddie has taught several enthusiastic kitchen employees his techniques, and with very little cooking experience, they have become celebrated and dedicated chefs and sushi chefs.
